Acids and alkalis

为什么Pure water is neutral. Anything below that point is acidic and anything above it is alkaline, with the strength growing as you move towards either end.

Acidic

提示Its sharp, sour taste gives it away.

为什么Citric acid gives lemons their sourness, just as ethanoic acid does in vinegar. Both are weak and dilute, which is why they are perfectly safe to eat.

Red

提示It goes the colour of a warning light, while an alkali sends the same paper blue.

为什么Litmus answers only one question: acid or alkali. Universal indicator goes further, giving a range of colours that each match a number on the pH scale.

Purple

提示It is the colour at the very top of the chart, one step past blue.

为什么The chart runs red, orange and yellow for acids, green at neutral, then blue to the darkest shade for the strongest alkalis such as oven cleaner.

Attack and destroy living tissue

Hydrogen

Carbon dioxide

Sulfates

提示The acid passes on its own surname, with the ending altered to show oxygen is present.

为什么Hydrochloric acid makes chlorides and nitric acid makes nitrates. The metal supplies the first half of the name, so magnesium plus sulfuric acid gives magnesium sulfate.

Evaporate the water

提示Leave it warm in a shallow dish until only solid is left in the bottom.

为什么Filter off any leftover solid first, then warm the solution gently and let it dry. Heating too fiercely spits the mixture out and spoils the crystals.

A mild alkali

提示To cancel out an acid you add its chemical opposite — but gently, since this is going into a stomach.

为什么Toothpaste does the same job for the acid bacteria make on your teeth, and farmers spread lime on soil that has turned too acidic. All three are one piece of chemistry.
