Projects at this scale typically involve giving students a first pass of feedback on structure, argument, or grammar quickly — something a single teacher marking 30+ essays a week simply cannot do at that speed — while keeping a human teacher as the one who makes the final call on quality.

That's the model worth paying attention to: AI as a first-pass feedback layer, with a human still doing the actual teaching. It's a much more modest and defensible use of AI than "AI writes your essay for you" or "AI grades your essay and that's final."
